Thai Basil, Lemongrass and Lime Mojito

Serves 4 Cooks in 2 Hours Difficulty Easy


It has been a great year at my Thai cooking class in Khao Lak. So to round off 2018 and see in 2019 in Thai style I have found a great cocktail recipe for you. It is the prefect addition to your Thai meal and will remind you of those lazy, balmy evenings here in Thailand.

This is a Thai version of the classic mojito but using traditional Thai ingredients. Thai basil and lemongrass add fragrant sweetness mixed with tangy lime and a little bitterness from the citrus rind.

You can also try a non-alcoholic version of this drink, just skip the rum and add a little extra lemongrass syrup.

Ingredients

  • 2 stalks lemongrass
  • 50 grams sugar
  • 2 limes (sliced into 8 lime wedges)
  • A large handful of Thai basil
  • 250 ml white rum
  • Soda water
  • Ice
  • Additional lemongrass stalks to use as stir sticks

How To Mix Thai Basil, Lemongrass and Lime Mojito

Lemongrass Syrup

  1. Chop the lemongrass stalks into 2-3cm pieces and smash in a mortar and pestle. Bring the smashed lemongrass stalks to the boil in 250ml of water and add the sugar.
  2. Reduce the heat and simmer for 2 minutes. Turn off the heat and let the syrup infuse for about 2 hours or allow to cool in the fridge for 24 hours.
  3. Strain the syrup pressing down on the lemongrass stalks to extract maximum flavour. Chill until ready to use.

Once the syrup is strained, it will also keep in your fridge for a couple of weeks.

Thai Mojitos

  1. Put 1/2 teaspoon of sugar into four cocktail glasses.
  2. Add 1 lime slice into each glass along with a handful of Thai basil and muddle together.
  3. Pour in 60ml of rum and 60ml lemongrass syrup.
  4. Top with ice and soda water and stir.

To Serve

Serve with a thin slice of lime, a Thai basil leaf and a lemongrass stalk for a stir stick.
