Crispy morning glory salad with shrimp

Ingredients

  • A good handful of morning glory
  • 6 cloves of garlic
  • 5 shrimp
  • 3 chilli
  • 1 long bean, chopped into 1/2cm pieces
  • 2 limes
  • 2 handfuls of roasted peanuts
  • 3 tbsp tempura flour
  • 2 tbsp palm sugar
  • 2 tbsp fish sauce
  • 1 tsp chicken stock
  • Oil
What you will need.

Method

  1. In a small sauce pan bring some water to the boil and cook the shrimp until they turn pink.
  2. Chop the morning glory into 3cm long pieces and mix with the tempura flour. Heat some oil in a wok and deep fry the morning glory until nice and crispy. Remove from the oil, drain and put to one side on some kitchen roll.
  3. Smash the chilli and garlic in a pestle and mortar. Then add the palm sugar, fish sauce, stock, peanuts, long bean and juice from the limes and smash until the ingredients form a nice sauce. When this is combined well, throw in the shrimp and mix so all the shrimp are coated in the sauce.

To Serve

Arrange the morning glory on a plate with the shrimp in a small bowl to one side. Serve as an accompaniment to your Thai meal or as a quick tasty Thai snack..
