Yam Pak Bung Klob
Serves 2 Cooks in 15 minutes Difficulty Easy
Ingredients
- A good handful of morning glory
- 6 cloves of garlic
- 5 shrimp
- 3 chilli
- 1 long bean, chopped into 1/2cm pieces
- 2 limes
- 2 handfuls of roasted peanuts
- 3 tbsp tempura flour
- 2 tbsp palm sugar
- 2 tbsp fish sauce
- 1 tsp chicken stock
- Oil
Method
- In a small sauce pan bring some water to the boil and cook the shrimp until they turn pink.
- Chop the morning glory into 3cm long pieces and mix with the tempura flour. Heat some oil in a wok and deep fry the morning glory until nice and crispy. Remove from the oil, drain and put to one side on some kitchen roll.
- Smash the chilli and garlic in a pestle and mortar. Then add the palm sugar, fish sauce, stock, peanuts, long bean and juice from the limes and smash until the ingredients form a nice sauce. When this is combined well, throw in the shrimp and mix so all the shrimp are coated in the sauce.
To Serve
Arrange the morning glory on a plate with the shrimp in a small bowl to one side. Serve as an accompaniment to your Thai meal or as a quick tasty Thai snack..
