Fried Shrimp Cakes

Serves 3-4 Cooks in 110 minutes Difficulty EASY


Ingredients

  • 300g shrimp
  • 100g minced pork
  • Pinch of Pepper
  • 8 cloves of garlic
  • 5 coriander roots
  • 1 tsp sugar
  • 1 tsp pork stock
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 2 eggs
  • Breadcrumbs for coating
  • Crispy powder

Method

  1. Smash the garlic and coriander in a pestle and mortar.
  2. Blend the shrimp, pork and 1 egg in a blender, then add 1 tablespoon of the crispy powder and combine well.
  3. Add the smashed garlic and coriander, then the pepper, soy sauce, sugar, stock and oyster sauce. Mix well and rest in the freezer for 30 minutes.
  4. Shape the mix into balls and flatten to make a cake about 5cm in diameter and 1 cm thick. Then push your thumb through the middle to form a ring.
  5. Coat with crispy powder, then dip in the yolk of the remaining, then coat with breadcrumbs and deep fry in oil.

To Serve

Serve with sweet chilli sauce dipping sauce.
