Tod Man Gung
Serves 3-4 Cooks in 110 minutes Difficulty EASY
- 300g shrimp
- 100g minced pork
- Pinch of Pepper
- 8 cloves of garlic
- 5 coriander roots
- 1 tsp sugar
- 1 tsp pork stock
- 1 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 egg yolk
- Breadcrumbs for coating
- Crispy powder
- Blend the shrimp and pork in a blender, then add 1 tablespoon of the crispy powder and combine well.
- Add the smashed garlic and coriander, pepper, soy sauce, sugar, stock and oyster sauce, mix well and rest in the freezer for 30 minutes.
- Shape the mix into balls and flatten to make a cake about 5cm in diameter and 1 cm thick. Then push your thumb through the middle to form a ring.
- Coat with crispy powder, then dip in egg yolk, then coat with breadcrumbs and deep fry in oil.
Serve with sweet chilli sauce dipping sauce.
