
Muu Ping
Serves 2 Cooks in 30 minutes + marinating 2 hours Difficulty Easy
Muu Ping, or Grilled Pork Skewers, are one of Thailand’s most popular street food snacks — smoky, sweet, and marinated in a rich blend of garlic, coriander root, and palm sugar. Serve them with sticky rice for an authentic taste of Thailand.
Ingredients
- 500g – 1kg pork neck
- 7 cloves garlic, roughly chopped
- 2 coriander roots, roughly chopped
- 1 tsp black peppercorns
- 2 tbsp palm sugar + 1 tsp extra
- 2 tbsp soy sauce
- 2 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tsp pork stock
- 50ml coconut milk
- 2 tbsp milk
- 1 tsp tapioca flour
- 1 lemongrass stalk, bashed with the blunt side of a knife
- Wooden skewers


Method
- Thinly slice the pork lengthways around 2cm thick and 10cm long, thinner or thicker to taste.
- Smash the garlic, coriander root and black peppercorns in a pestle and mortar.
- In a large bowl mix all the ingredients together except the lemongrass and retain the extra 1 teaspoon of palm sugar. Then add the pork and mix well. Leave the mixture to marinate for at least 2 hours.
- Put the pork on the wooden skewers and place on your grill tray.
- Add the remaining 1 teaspoon palm sugar to the left over marinate and mix until the sugar has dissolved.
- Baste the pork skewers using the bashed lemongrass stalk with some of the remaining marinate.
- Place under the grill or on a barbecue.
- Turn and baste the pork skewers 3 to 4 times as they cook. If any part of the pork starts to burn you can simply cut off the burnt bits with a pair of scissors.
To Serve
Serve on a plate with some sticky rice
