
Salat Neua
Serves 2 Cooks in 20 minutes marinating 2 hours Difficulty EASY
Ingredients
- 1 good handful of glass noodles
- 300g beef
- 1 shallot, roughly chopped
- 4-8 chillies, sliced
- 30g cucumber, cut into small chunks
- 1/2 tomato, cut into segments
- 1/4 onion, sliced
- 2 tbsp juice from pickled garlic and 1 clove, sliced
- 1 spring onion, sliced
- Small bunch of coriander, just the leaves
- 2 tbsp fish sauce
- 1 tsp beef stock
- 2 tbsp lime juice
- 1 tbsp sugar
- 1 tbsp oyster sauce
- 1 tbsp sesame oil
- 2 tbsp oil
- 1/2 tsp pepper
Method
- Mix the oyster sauce, pepper and sesame oil in a bowl. Add the beef and leave it to marinate for two hours in the refrigerator.
- Heat the oil in a wok or frying pan and fry the beef on both sides until cooked through. Then slice the beef into strips.
- Bring some water to the boil in a small saucepan and add the glass noodles. Then turn off the heat and leave to soften for a few minutes. Drain well.
- In a bowl, mix the fish sauce, sugar, lime juice, chilli, stock, garlic and pickled garlic juice. Then add the beef and mix well.
- Finally, add the cucumber, drained glass noodles, coriander, onion, spring onion and tomato and give everything a final stir to mix.
To Serve
Serve on a plate with some extra coriander leaves to garnish.
