Pad Pak Bung Kai Kratiem
Serves 2 Cooks in 20 minutes Difficulty Easy
Ingredients
- 100g chicken
- A good bunch of morning glory
- 10 cloves of garlic
- 5 chilli (less if you do not like spicy)
- 2 tbsp oyster sauce
- 1 tbsp soybean paste
- 1 tsp chicken stock
- 1 tbsp sugar
- 2 tbsp oil
Method
- Chop five of the garlic cloves, heat two tablespoons of oil in a wok and fry the garlic until it goes crispy. Becareful not to brown the garlic too much. Drain, retaining the oil in the wok and set the garlic to one side for the topping at the end.
- Slice or chop the chicken and fry in the same wok until cooked. Drain and set to one side.
- Smash the remaining five garlic cloves and the chilli in a pestle and mortar.
- Chop the morning glory into 3cm long pieces.
- Heat the oil again until it is nice and hot.
- Combine all the ingredients including the cooked chicken in a large bowl, throw into the wok and stir fry quickly for a couple of minutes. Do not over cook your morning glory as it will loose it’s nice green colour.
To Serve
Serve on a plate or in a bowl and top with the crispy garlic. This dish is a great accompaniment to your Thai meal or eat a quick tasty Thai snack.
