
Tod Man Lenthil
Serves 4 Cooks in 20 Minutes + soaking 90 Minutes Difficulty EASY
Ingredients
- A good handful of grated green papaya
- 250g yellow lentils, soaked at least 90 minutes in hot water until soft
- 2 tbsp red curry paste
- 5 kafir lime leaves, stalks removed and very finely sliced
- 4 chilli, sliced
- 2 long beans
- 1 egg
- 1 tbsp vegan fish sauce
- 1 tsp vegetable stock
- 2 tbsp sugar
- 3 tbsp tempura flour
- 2 tbsp rice flour
- 250ml oil for frying


Method
- Add all the ingredients to a bowl and mix well.
- Take around two tablespoons of the mixture and roll it into a ball, then flatten a little to form a rough disc shape.
- Heat the oil in a wok and fry the discs, turning once until both sides are golden and crispy.
- Remove from the wok, drain and remove any excess oil on some kitchen roll.
To Serve
Serve with sweet chilli sauce and some sliced cucumber.
