
Gai Pad Khing
Serves 2 Cooks in 10 minutes Difficulty Easy
I have another really easy dish I would like to share with you. Again this was recently requested at my Thai cooking class here in Khao Lak. It’s so simple with all ingredients very easy to source from your local market or supermarket, I just couldn’t keep it to myself.
Gai Pad Khing as we call the dish here in Thailand is just fried chicken with ginger and a few other ingredients and veggies. Khing is Thai for ginger. You can use any meat instead of chicken, anything would work, even shrimp or fish.
If you would like to make it vegetarian then just add extra vegetables or tofu and use mushroom sauce instead of oyster sauce and vegetable stock.
I chose mushrooms, sweet chilli, spring onions and baby corns for my recipe but you can different vegetables and not necessarily Thai ones.
With a preparation time of only 10 to 15 minutes this is a great lunch or simple dinner but definitely packing an authentic Thai taste. Hope you enjoy!
Ingredients
- 150 – 200g sliced chicken breast
- 1 handful of mushrooms (I used monkey ear mushrooms)
- 3cm chunk of Ginger, cut into long thin slices
- 1 sweet chilli cut into chunks
- 2 – 3 baby sweet corns, chopped into small discs
- 7-8 cloves of garlic roughly chopped
- 1/2 onion cut into segments
- 3 – 4 spring onions cut into 1-2 cm pieces
- 1 tbsp oyster sauce
- 1 tsp soy sauce
- 1 tsp soy-bean paste
- 1 tsp sugar
- 1 tsp chicken stock
- Water
- Oil
Method
- Heat 2 tbsp oil in a wok and quickly fry the garlic. Add the chicken and ginger and stir fry.
- When the chicken is cooked add the vegetables, except the spring onion plus the oyster sauce, soy sauce, soy-bean paste, sugar, stock and a little water. Stir fry for two to three minutes.
- Throw in the spring onions, give a final stir and remove from the heat.
To Serve
Serve on a plate with some steamed Jasmin rice.
