This dish was recently requested at my Thai cooking class here in Khao Lak. It’s a simple vegetarian stir fry with tofu and vegetables. Pad Pak Ruam Tao Huu in Thai.

The great thing about this dish is you can use pretty much any vegetable you fancy or can get your hands on. It does not have to be Thai vegetables.

I would recommend this as a quick and easy lunch or as an accompanying dish for a Thai dinner. Once you try it you will be stir frying other variations, it’s so easy. Enjoy!

Ingredients

  • 1 block of tofu, chopped into 2cm cubes
  • A few strips of sliced carrot
  • A little cabbage, roughly chopped
  • Handful of small mushrooms
  • 1 tomato, cut into segments
  • Kale leaves roughly chopped
  • Any other vegetable you fancy….
  • 10 cloves of garlic (less if strong garlic), roughly chopped
  • 1-2 chilli
  • 2 tbsp oyster sauce
  • 1 tsp soy sauce
  • 1-2 tsp sugar
  • 1 tsp vegetable stock
  • 2 tbsp water

What you will need

  1. Heat some oil in a wok and quickly fry the tofu until it is a little crispy, remove and place on a paper towel to remove any excess oil.
  2. Heat some more oil in a wok and stir fry the garlic and chilli for a minute.
  3. Throw in all the vegetables, oyster sauce, soy sauce, sugar, stock and water. Quickly stir fry for two to three minutes.

To Serve

Serve on a plate with some steamed Jasmin rice.
