Bplah Rad Prik
Serves 2 Cooks in 20 minutes Difficulty EASY
- 1 fish
- 10 cloves garlic
- 10 chilli
- 2 sweet chilli
- 2 sprigs coriander
- 3 tbsp tamarind sauce
- 1 lime
- 4 tbsp fish sauce
- 4 tbsp palm sugar
- 1 tbsp sugar
- 1 tbsp tempura flour
- 2 tbsp oil
- Oil for deep frying
- Dust the fish with the tempura flour and deep fry until cooked and crispy.
- Add chilli, sweet chilli, the roots of the coriander stalks and the garlic and mix in a blender.
- Take this mix and add to a sauce pan along with the oil, palm sugar, fish sauce, tamarind sauce, juice from the lime and 4 tbsp water.
- Bring the mixture to the boil, then gently simmer for 5 minutes.
The the fish on a plate or shallow bowl, cover with the sauce and garnish with the rest of the coriander. Serve with Jasmin rice.
