Red Pork with Rice

Serves 4 Cooks in 105 minutes (plus 5 hours to marinate) Difficulty EASY


Pork Marinade

  • 1/2 kg pork neck, leave whole
  • 1 tsp palo powder
  • 1 tbsp garlic
  • 3 coriander roots
  • 1/2 tsp pepper
  • 1 tbsp sugar
  • 1 tbsp palm sugar
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 25 ml water
  • Pinch of red food colouring

What you will need.

Red Sauce

  • Left over marinade
  • 2 tbsp sugar
  • 2 tbsp soy sauce
  • 1/2 tsp pork stock
  • 2 tbsp oyster sauce
  • 1 tsp dark soy sauce
  • 1/2 cup water
  • 1 tsp corn flour
  • 1 tsp sesame oil
  • 1 1/2 tbsp crush peanuts, roasted
  • 1 1/2 tbsp sesame seeds, roasted

What you will need.

Chilli Sauce

  • 2 tbsp vinegar
  • 1 1/2 tbsp sugar
  • 1 tsp salt
  • 1 tbsp dark soy sauce
  • 1 tbsp red chilli, chopped

Making the chilli sauce .


  1. Smash the garlic and coriander roots in a pestle and mortar.
  2. Place this mixture in a bowl along with the pork and the rest of the marinade ingredients. Mix everything together and then leave in the fridge for 5 hours. Save the marinade for the red sauce.
  3. Pre-heat grill to 200˚C, place the pork on a try and grill for 30-35 minutes turning occasionally.
  4. Allow the pork to cool and slice.
  5. To make the red sauce, mix all the ingredients and bring to the boil in a saTo make the chill sauce, mix all the ingredients and bring to the boil in a sauce pan, then remove.

To Serve

Serve the pork with rice, cucumber slices and a halved hard boiled egg and top with the two sauces, a handful of coriander and some chopped spring onions.
